Easy Fudge Cake

I got this one from "The Beany Malone Cookbook" (I'd be curious to hear if any of you have heard of the Beany Malone books!) and it fast became a favorite! It is so moist and yummy! Needless to say, in my large family one 8-in pan is not going to do it so I usually double it and bake it in a 9x13 pan.

Preheat oven to 350.

Ingredients:
1/2 c margarine or butter
1 c sugar
3 Tbsp cocoa
2 beaten eggs
1 c flour
1/2 c milk
1 tsp vanilla
1/2 c chopped nuts (optional)

Directions:
In a warmed bowl cream together the margarine, sugar, and cocoa until smooth. Add the beaten eggs and beat all together. Add the flour and milk alternately, beating as you do so. Then add the vanilla and the chopped nuts.
Oil and flour an 8-in square pan. Pour int the mixture, and bake 35 minutes or until a straw or toothpick stuck in the middle of the cake comes out clean.
Cut into squares when cool.
