Yum! I wanted to try something new for supper so I went surfing the web to find a good recipe. Found one that I tweaked a little and it was delicious!!! I will definitely be making this again.
Was asked for the recipe so here it it! :-)
Ingredients:
2 lbs diced hashed browns (or diced potatoes)
1 medium onion diced
1 tsp fresh parsley
3 Tbs butter, melted
2 tsp salt
1/4 tsp pepper
6 boneless, skinless chicken breasts
3 Tbs butter, melted
2 Tbs paprika
1 Tbs lemon juice
1 tsp worcestershire sauce (I substituted soy sauce and it was great)
1 Tbs honey
dash of salt
Directions:
Combine potatoes, onion, parsley, butter, salt and pepper in the bottom of the crock pot. Make a "paste" out of the butter, paprika, lemon juice, worcestershire sauce, honey, and salt and rub onto the chicken. Place chicken over the potato mixture. (I then drizzled a tiny bit of water around the edges a bit because I was freaked out about it burning. lol Probably not necessary but it definitely didn't ruin it.) Cover and cook on high for 4-4 1/2 hours or until chicken is done and veggies are tender.

Ranch Pork Roast
Made this for the first time a year or so ago and it was wonderful! Because of the meat and cream cheese it's not the kind of recipe I can do all of the time but Mama bought some meat and I told her about this recipe so it's in the crock pot right now. :-) Someone one FB requested the recipe so I thought I'd just post it on here. Simple and way yummy. :-)
Ingredients:
2 1/2 lbs pork roast/steak whatever :-)
1 lb potatoes
1 small can of cream of chicken soup
1 8 oz cream cheese
.4 oz of ranch dressing powder
Directions:
Dice potatoes, brown meat, and mix up the soup, cheese, and dressing. Put all into the crock pot and cook on low for 9 to 10 hours or on high for 4 1/2 to 5 hours.
FYI, I doubled the recipe and added a couple of lbs of potatoes to make it stretch...and put a blob of plain yogurt in for the second 8 oz of cream cheese. It's a very forgiving recipe. :-)
