Creamy Cheesy Garlic Sauce

I snatched this recipe from another recipe (Lasagna/Alfredo Yumminess!) because it was so good! A few days after trying the aforementioned recipe I made goulash (what we call slap-stick spaghetti at my house) and thought this sauce would really make it extra yummy. It did! lol and I plan on using it often!


Ingredients:


2/3 cup non-fat powdered milk
1/2 cup water
4 oz reduced-fat cream cheese, cubed
1 tsp minced garlic


Combine all ingredients in a med sauce pan over a med/low heat. Cook and stir until cream cheese is melted. Pour over your dish!

Lasagna/Alfredo Yumminess!

I actually came across and tried this recipe because I was looking for diabetic recipes for a couple in our church. This one looked so good I actually snitched a bite and am thinking I'm going to have to make it again for my family some time! This is the original recipe. I had to tweak it a little bit as I didn't have all of the ingredients, that's why I renamed it. Here's my version:


Ingredients:


3 cups noodles, cooked
1/2 pound ground turkey
1/2 large onion, chopped
1 small can of stewed tomatoes, blended
1/2 tsp sweet basil
2/3 cup nonfat dry milk powder (this stuff is actually good for something! :-P)
1/2 cup water
4 oz reduced-fat cream cheese, cubed
1 tsp minced garlic
1 cup shredded mozzarella cheese




Directions:


Preheat oven to 375 degrees. Brown ground turkey with the onion. Stir in the tomatoes, basil, and S & P to taste. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. In a saucepan, combine milk powder, water, cream cheese, and garlic. Cook and stir over med heat until cream cheese is melted. Add cooked and drained noodles to the cream cheese mixture. Transfer to a 8-in casserole dish coated with oil. Top with the turkey mixture. Sprinkle with mozzarella cheese. Bake, uncovered, for 20 minutes or until cheese is melted.


   Totally should have taken a photo of it because it was yummy looking! But, I guess you'll just have to go by your imagination. Or make it for yourself... :-)

No-Bake Cookies

Was asked to post this recipe a month or so ago and am finally getting around to it. This is one of those ridiculously easy recipes that is so yummy. It's a great, "I feel like some sweet really quick" recipe. Basic ingredients and comes together quickly. The hardest part is letting them sit long enough to set up! :-P
FYI, this recipe is another one that is courtesy of my "Beany Malone Cookbook" :-)


Ingredients:


1/2 cup milk
2 cups sugar
1/4 cup (1/2 stick) margarine or butter
1/2 cup peanut butter
3 Tbsp dry cocoa
3 cups quick-cooking oatmeal
1 tsp vanilla
The recipe also calls for an optional 1/2 cup chopped nuts.
I've never put them in but you can try it if you want.




Directions:


   Measure the milk, sugar, butter, peanut butter, and cocoa in a large saucepan and stir well together. Bring to a boil, and boil only 1 minute. Stir in the oatmeal, nuts, and vanilla and mix well. Drop by spoonfuls on wax paper and let cool. Makes 40-50 cookies.
